Roasted or Unroasted Pistachios?

Roasted by far is the most popular choice for creating pistachio syrup, the roasting brings out the best flavors and hidden notes of earthy and creaminess tucked away. Roasted will still offer a pistachio flavor, but will be less complex in regard to other flavors. If all you have is unroasted pistachios, just place them on a cookie sheet and roast for 15-20 minutes at 360F.

Salted or Unsalted Pistachios?

Either one will do, we prefer using lightly salted pistachios as they are the perfect mix of salted vs unsalted. If you choose regular salted pistachios, make sure to try them first if they taste a little salty try rinse the salt off of half of the portion you’ll be using. If unsalted, just make sure to add a tiny 1/4 teaspoon of salt to the syrup at the end and taste test to see if it needs more.
